Apple Peanut Butter Breakfast Bars (vegan) INGREDIENTS: ½ cup dried apples, diced 1/3 cup honey ¼ cup raisins (I’ve also used dried cranberries, dates or figs would be great too) 1 tablespoon packed brown sugar 1/3 cup natural peanut butter ¼ cup applesauce 1 tablespoon butter ½ teaspoon cinnamon ½ cup rolled oats ½ cup chopped walnuts or pecans (I’ve also used slivered almonds, or any kind of nuts you have) 1/3 cup toasted wheat germ ¼ cup roasted sunflower seeds (unsalted) 2 cups bran flakes INSTRUCTIONS: In a medium saucepan, combine apples, honey, raisins, and brown sugar. Heat and stir until mixture boils, then reduce heat slightly. Cook uncovered for one minute, stirring constantly. Remove from heat and stir in peanut butter until melted. Blend in applesauce, butter, and cinnamon. Stir in oats, nuts, what germ, and sunflower seeds until well combined. Add bran flakes and stir. Press the mixture firmly (especially the corners, or bars will crumble) and evenly into an eight-inch square pan, two inches deep. Chill to set and then cut into eighths. Makes 8 bars. NUTRIENTS PER BAR: 175 calories, 8 g fat (1 g saturated fat), 38 g carbohydrates, 9 g protein, 8 g fiber.
